咖啡甜心(puff)——巧克力草莓泡芙



用料1 (泡芙面糊)  
黄油75g面粉100g80ml牛奶100ml4g4g2-3颗​    用料2 (内馅)  安佳淡奶油150ml牛奶85ml20g蛋黄1个        低粉5g粟粉3g香草豆荚1小段15g朗姆酒5cc​    用料3   巧克力适量草莓适量         糖粒        适量​做法    
1.泡芙:将水、牛奶、盐、糖和黄油放入锅中煮沸,离火      
2.筛入低粉,用木勺用力搅匀至无干粉      
3.再开火,边加热边搅拌,直到面糊平滑且均匀,锅底有层膜      
4.放入赶紧的盆中,蛋一颗一颗的加入,每次加入都需鸡蛋完全吃进面糊后才能加入下一个蛋      
5.拌至提起木勺,面糊入丝绸般落下、木勺上呈倒三角装      
6.装入有裱花嘴的挤花袋中      
7.挤在烤盘上,并在表面喷水      
8.入预热好的200℃的烤箱中,烤20分钟左右      
9.草莓洗干净、沥干、改刀,巧克力隔水融化      
10.将融化的巧克力浇在放凉的泡芙上,撒上糖粒,待干      
11.泡芙横剖,挤入内馅(鲜奶油香醍打至7分发,再和卡士达拌匀即可),放上草莓、该上盖子。也可以在泡芙的底部挤入内馅食用
